Bacon Egg and Hash Brown Casserole

1 lb (450g) bacon, chopped

1 ½ lbs (680g) frozen hash browns, thawed

1 cup (240ml) heavy cream

6 large eggs

2 cups (200g) shredded cheddar cheese

1 cup (100g) diced green bell pepper

1 cup (100g) diced onion

½ tsp garlic powder

½ tsp onion powder

¼ tsp black pepper

Salt to taste

¼ cup (60ml) chopped fresh chives (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch (23x33cm) baking dish.

    Cook the Bacon: In a large skillet over medium-high heat, cook the chopped bacon until crispy, about 7-10 minutes. Remove the bacon and drain on paper towels, leaving about 2 tablespoons of bacon fat in the skillet.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 4-5 minutes. Remove from heat and let cool slightly.

        Mix the Hash Brown Base: In a large mixing bowl, combine the thawed hash browns, cooked bacon, sautéed vegetables, heavy cream, eggs, garlic powder, onion powder, salt, and black pepper. Mix well until everything is evenly combined.

          Add Cheddar Cheese: Gently fold in 1 ½ cups (150g) of shredded cheddar cheese into the hash brown mixture for extra creaminess.

            Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it out evenly. Top with the remaining ½ cup (50g) of cheddar cheese.

              Bake: Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the casserole is golden brown and set in the middle. You can tent it with foil if it browns too quickly.

                Cool & Serve: Allow the casserole to cool for about 10 minutes before slicing into squares. Serve warm, garnished with fresh chives if desired.
