6 large eggs

1 cup shredded sharp cheddar cheese

6 slices of bacon, cooked and crumbled

1/2 cup diced bell pepper (any color)

1/4 cup diced onion

1/4 teaspoon garlic powder

Salt and pepper to taste

4 large flour tortillas (10-inch)

1/4 cup salsa (optional)

Fresh cilantro, chopped (for garnish)

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until crispy. Once done, remove them from the pan and place on a paper towel to drain excess grease. Crumble the bacon into small pieces.

    Sauté the Vegetables: In the same skillet with the leftover bacon grease, add the diced bell pepper and onion. Sauté for about 3-4 minutes until they are soft and slightly caramelized. Add garlic powder, salt, and pepper, stirring to combine.

      Whisk the Eggs: In a large bowl, crack the eggs and whisk them until well combined. Season with a little salt and pepper.

        Cook the Eggs: Pour the beaten eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring gently until the eggs are just set but still creamy, about 3-4 minutes. Remove from heat and stir in the crumbled bacon and shredded cheddar cheese until melted.

          Assemble the Burritos: Lay a flour tortilla flat on a clean surface. Spoon a generous portion of the egg mixture into the center of the tortilla. If desired, add a spoonful of salsa. Fold in the sides and then roll tightly from the bottom up to create a burrito.

            Toast the Burritos (optional): For a crispy exterior, return the burritos to the skillet with a little melted butter or cooking spray. Toast for about 2 minutes on each side until golden brown.

              Serve: Slice each burrito in half diagonally and garnish with fresh cilantro. Serve with additional salsa on the side if desired.
