2 medium zucchinis, grated

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 large eggs

1/4 cup fresh parsley, chopped (optional)

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease it lightly with oil.

    Prepare the Zucchini: Grate the zucchinis using a box grater. Place them in a clean kitchen towel and squeeze out excess moisture. This will help prevent the bites from being too watery.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and black pepper.

        Combine Cheeses: Add the grated Parmesan and shredded mozzarella to the dry ingredients. Stir until the cheeses are evenly coated with the flour mixture.

          Mix Wet Ingredients: In a separate bowl, beat the eggs. Then, stir in the olive oil and chopped parsley (if using).

            Combine Mixtures: Add the grated zucchini to the wet mixture and stir until well combined. Then, pour this mixture into the bowl with the dry ingredients. Fold everything together gently until just combined. Do not overmix.

              Shape the Bites: Using a tablespoon, scoop the mixture onto the prepared baking sheet, forming small mounds. Leave space between each bite to allow for spreading.

                Bake: Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the bites are golden brown and a toothpick inserted into the center comes out clean.

                  Cool & Serve: Once cooked, remove from the oven and let the bites cool on the baking sheet for a few minutes before transferring to a wire rack. Serve warm as a snack or appetizer!
