8 oz. rotini or penne pasta

1 lb. ground beef (or ground turkey)

1 packet taco seasoning (about 1 oz.)

1 cup diced tomatoes (canned or fresh)

1 cup black beans (drained and rinsed)

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1 cup sour cream (or Greek yogurt for a healthier option)

1/2 cup salsa (plus more for serving)

1 avocado, diced

1/2 cup sliced green onions

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

2 tbsp olive oil

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Meat: In a large skillet over medium heat, heat the olive oil. Add ground beef (or turkey) and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Season with salt and pepper.

      Add Taco Flavor: Sprinkle taco seasoning over the cooked meat. Stir in the diced tomatoes, black beans, and corn. Allow the mixture to simmer for about 5 minutes, stirring occasionally to combine the flavors.

        Combine Pasta and Meat: Add the cooked pasta to the skillet with the taco mixture. Stir well to combine and heat through. Remove from heat.

          Assemble the Bowls: In a serving bowl or plate, layer the taco pasta mixture. Top with a generous dollop of sour cream, a sprinkle of shredded cheddar cheese, and diced avocado.
