Ingredients
  

1 cup milk

1/2 cup butter, melted

2 large eggs

1 cup granulated sugar

1/2 cup all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

Optional: powdered sugar for dusting

Optional: whipped cream for serving

Instructions
 

Preheat your oven to 350°F (175°C). Grease a muffin tin or small pie tin with non-stick spray or butter.

    In a medium mixing bowl, whisk together the milk, melted butter, and eggs until well combined.

      Add the sugar, flour, salt, vanilla extract, lemon juice, and lemon zest to the wet ingredients. Whisk until the mixture is smooth and combined.

        Pour the batter evenly into the prepared muffin or pie tins, filling each cup about halfway.

          Place the muffin tin in the oven and bake for 30-35 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

            Remove the pies from the oven and allow them to cool in the tin for about 10 minutes, then carefully remove them and let them cool completely on a wire rack.

              Dust with powdered sugar if desired and serve with a dollop of whipped cream for extra indulgence.
