1 ripe avocado, peeled and pitted

1 medium ripe mango, peeled and diced

1 cup canned chickpeas, rinsed and drained

1/2 red bell pepper, finely chopped

1/4 cup red onion, finely diced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or spinach tortillas

Optional: 1/2 cup Greek yogurt or hummus for spreading

Prepare the Chickpea Mash: In a medium bowl, use a fork or a potato masher to mash the chickpeas until chunky, leaving some whole for texture.

    Mix in the Vegetables: To the mashed chickpeas, add the diced mango, chopped avocado, red bell pepper, red onion, and cilantro. Mix well.

      Season the Filling: Drizzle the lime juice over the mixture, sprinkle in the ground cumin, and season with salt and pepper. Stir until all ingredients are well combined.

        Prepare the Wraps: Lay a tortilla flat on a clean surface. If using, spread a layer of Greek yogurt or hummus on the tortilla to add creaminess.

          Fill the Wraps: Spoon a generous amount of the chickpea mixture onto the center of the tortilla, being careful not to overfill.

            Wrap It Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas and filling.
