1 ripe avocado, peeled and pitted

1 cup canned chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons lemon juice

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup baby spinach leaves

1 medium carrot, grated

1/2 cucumber, thinly sliced

1 red bell pepper, thinly sliced

1/4 cup alfalfa sprouts (optional)

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Make the Avocado Hummus: In a food processor, combine the avocado, chickpeas, tahini, lemon juice, minced garlic, ground cumin, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.

    Prepare the Wraps: Lay out the tortillas on a clean surface. Evenly spread a generous amount of the avocado hummus onto each tortilla, leaving about an inch around the edges.

      Add the Veggies: On top of the hummus, layer spinach leaves, grated carrot, cucumber slices, and red bell pepper. If using, sprinkle alfalfa sprouts and crumbled feta cheese on top for additional flavor.

        Wrap It Up: Starting from one end, carefully roll the tortilla tightly around the fillings, tucking in the sides as you go to create a secure wrap.

          Slice and Serve: Once wrapped, slice each wrap in half diagonally. Serve immediately, or wrap in parchment paper for a perfect on-the-go lunch.
