Ingredients
  

2 ripe avocados, diced

1 cup cooked chicken, shredded (grilled or boiled)

1 cup sweet corn, fresh or canned (drained)

1 small red onion, finely chopped

1 bell pepper (red or yellow), diced

¼ cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: ½ cup cherry tomatoes, halved

Optional: Crushed tortilla chips for garnish

Instructions
 

Prepare the Chicken: If you haven't done so, cook the chicken by grilling or boiling until fully cooked, then shred it into bite-sized pieces.

    Prepare the Veggies: In a large mixing bowl, combine the diced avocados, sweet corn, chopped red onion, diced bell pepper, and cherry tomatoes (if using).

      Mix the Dressing: In a smaller bowl, whisk together the lime juice, olive oil, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: Add the shredded chicken and chopped cilantro to the bowl of veggies. Pour the dressing over the top and gently toss everything together until evenly coated. Be careful with the avocados to prevent them from mashing too much.

          Taste & Adjust: Taste the salad and adjust the seasoning with more salt, pepper, or lime juice depending on your preference.
