Avocado Cloud Toasts

2 ripe avocados

1 large egg

1 slice of whole grain bread

2 tablespoons cream cheese

Juice of 1/2 lemon

Salt and freshly ground pepper to taste

Red pepper flakes (optional, for garnish)

Fresh herbs (such as chives or basil, for garnish)

Instructions
 

Prepare the Avocado Spread:

    - Cut the ripe avocados in half, remove the pit and scoop the flesh into a bowl.

      - Add the lemon juice, salt, and pepper. Mash with a fork until creamy but slightly chunky.

        Make the Cloud Egg:

          - Preheat your oven to 375°F (190°C).

            - Separate the egg white from the yolk, placing the egg white in a clean bowl and the yolk in a small ramekin.

              - Whisk the egg white until stiff peaks form (you can use an electric mixer or a whisk).

                - Gently fold in the cream cheese until well combined.

                  Shape the Cloud:

                    - Line a baking sheet with parchment paper.

                      - Spoon the whipped egg white mixture onto the parchment to create a cloud shape, leaving a small well in the center for the egg yolk.

                        - Carefully place the egg yolk in the well.

                          Bake:

                            - Bake in the preheated oven for about 12–15 minutes, or until the edges are golden and the egg yolk is cooked to your liking.

                              Toast the Bread:

                                - While the cloud egg is baking, toast the slice of whole grain bread until golden brown.

                                  Assemble:

                                    - Spread a generous amount of the avocado mixture over the toasted bread.

                                      - Carefully place the cloud egg on top of the avocado toast.

                                        Garnish:

                                          - Sprinkle with red pepper flakes and fresh herbs to taste.

                                            Serve:
