1 pound fresh spinach

2 tablespoons sesame oil

2 garlic cloves, minced

1 tablespoon soy sauce

1 teaspoon sesame seeds

1 teaspoon sugar

½ teaspoon salt

1 scallion, finely chopped (optional for garnish)

Prep the Spinach: Rinse the fresh spinach under cold water to remove any dirt or grit, then drain well. If the spinach stems are thick, consider trimming them for a more tender bite.

    Blanch the Spinach: In a large pot, bring a generous amount of water to a boil. Once boiling, add the spinach and blanch for 1-2 minutes until the leaves are wilted and vibrant green. Be careful not to overcook.

      Ice Bath: Immediately transfer the blanched spinach to a bowl of ice water to stop the cooking process. Let it cool for 2-3 minutes, then drain and gently squeeze out any excess water. This will keep the spinach fresh and crunchy.

        Prepare the Dressing: In a small bowl, mix together the sesame oil, minced garlic, soy sauce, sugar, and salt. Whisk until well combined.

          Combine and Toss: In a large mixing bowl, add the drained spinach. Pour the dressing over the spinach and gently toss until all the leaves are evenly coated.
