Asparagus and Lemon Pasta

8 oz linguine or spaghetti

1 lb fresh asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil

3 garlic cloves, minced

Zest of 1 large lemon

Juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the pasta and set aside.

    Blanch the Asparagus: In the same pot, add the asparagus pieces to the boiling pasta water for about 2-3 minutes until bright green and tender-crisp. Remove the asparagus with a slotted spoon and set aside, keeping the water for the pasta.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Combine: Add the reserved asparagus to the skillet with the garlic. Stir in the lemon zest and lemon juice, cooking for another minute.

          Toss the Pasta: Add the drained pasta to the skillet. Toss everything together, adding a bit of the reserved pasta water as needed to create a light sauce that coats the pasta.

            Finish: Remove from heat, and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. For a little extra zing, adjust the lemon juice and zest as desired.

              Serve: Plate the pasta and garnish with chopped parsley. Add more Parmesan if desired and a sprinkle of additional red pepper flakes for heat.
