2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, julienned

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1 cup edamame, shelled

1/2 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup peanuts, crushed (optional for garnish)

Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 teaspoon minced garlic

1 tablespoon sesame seeds

Instructions
 

Prepare the Veggies: In a large mixing bowl, combine the shredded green cabbage, purple cabbage, julienned carrots, diced cucumber, diced bell pepper, shelled edamame, chopped green onions, and fresh cilantro. Toss well to combine.
