Ingredients
  

2 medium apples (such as Honeycrisp or Granny Smith), julienned

2 cups green cabbage, finely shredded

1 cup carrots, grated

1/2 cup red cabbage, finely shredded

1/4 cup red onion, thinly sliced

1/3 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped (optional)

1/2 cup plain Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper to taste

Fresh parsley or cilantro for garnish (optional)

Instructions
 

In a large mixing bowl, combine the julienned apples, green cabbage, carrots, red cabbage, red onion, raisins or dried cranberries, and nuts if using.

    In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey (or maple syrup), salt, and pepper until smooth.

      Pour the dressing over the slaw mixture and toss well to coat all ingredients evenly.

        Taste the slaw and adjust seasoning if needed, adding more salt, pepper, or honey/maple syrup according to your preference.

          Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

            Just before serving, give it a good toss and garnish with fresh parsley or cilantro if desired.
