Apple Pie Waffle Sandwiches

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon cinnamon

¼ cup brown sugar

1 tablespoon butter

1 cup all-purpose flour

1 tablespoon sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter (for the batter)

Whipped cream (for serving)

Maple syrup (for drizzling)

Instructions
 

In a medium bowl, toss the diced apples with lemon juice, cinnamon, and brown sugar. Let the mixture sit for about 10 minutes to allow the flavors to meld.

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the apple mixture and cook for about 5-7 minutes, or until the apples are tender and caramelized. Remove from heat and set aside.

      Preheat your waffle iron according to the manufacturer's instructions.

        In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, mix the milk, egg, and melted butter until well combined.

          Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

            Lightly coat the waffle iron with non-stick spray or a small amount of melted butter. Pour enough batter into the waffle iron to cover the surface. Close the lid and cook according to your waffle iron’s instructions until golden brown and crispy. Repeat with the remaining batter.

              Once the waffles are ready, assemble the sandwiches by taking one waffle, spooning a generous amount of the caramelized apple mixture on top, and topping it with a second waffle.

                Serve warm, topped with a dollop of whipped cream and a drizzle of maple syrup for extra sweetness.
