1 large egg

1 teaspoon vanilla extract

2 tablespoons brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1/4 teaspoon nutmeg (optional)

1 tablespoon butter

Maple syrup or caramel sauce

Whipped cream (optional)

Prepare the Apples: In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, lemon juice, and nutmeg (if using). Cook for about 5-7 minutes or until the apples are tender and slightly caramelized. Set aside to cool.

    Make the Pancake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined (some lumps are okay).
