1 cup rolled oats

1/2 cup almond flour

1/2 cup unsweetened peanut butter or almond butter

1/4 cup honey or maple syrup

1/2 cup finely chopped dried apples

1/4 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon vanilla extract

1/4 teaspoon salt

2 tablespoons chia seeds (optional)

Prepare Your Ingredients: In a large mixing bowl, combine rolled oats, almond flour, cinnamon, nutmeg, and salt. Mix well until the dry ingredients are evenly distributed.

    Add Wet Ingredients: In a separate bowl, mix together the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir with a spatula until fully combined. The mixture should be sticky but hold together. If it’s too dry, add a splash of water; if too wet, add a little more almond flour.

        Fold in Add-Ins: Gently fold in the finely chopped dried apples, chopped walnuts (or pecans), and chia seeds (if using). Mix until the add-ins are evenly distributed throughout the energy ball mixture.

          Form Energy Balls: Using your hands, scoop out about 2 tablespoons of the mixture and roll it into a ball. Place on a baking sheet lined with parchment paper. Repeat until all the mixture is used up.

            Chill: Once all the energy balls are formed, place them in the refrigerator for at least 30 minutes to firm up.
