To create a truly delicious Cozy Apple Cranberry Bread Pudding, it’s essential to understand the role each ingredient plays in the final product. The star of the show is, of course, the bread. When it comes to choosing the right type, French bread and challah are two excellent options. Both varieties have a sturdy structure that holds up well during the soaking process, allowing them to absorb the custard without becoming overly soggy. Opting for day-old bread is advisable, as it has had time to dry out slightly, making it better suited for this rich dessert.

Ingredients

6 cups of day-old bread, cubed (French bread or challah works best)

2 cups of diced apples (about 2 medium apples, peeled and cored)

1 cup of dried cranberries

4 large eggs

2 cups of whole milk

1 cup of heavy cream

3/4 cup of granulated sugar

1 teaspoon of vanilla extract

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

1/4 teaspoon of salt

1/2 cup of chopped walnuts or pecans (optional)

2 tablespoons of butter, for greasing the baking dish

Powdered sugar, for dusting (optional)

Whipped cream or ice cream, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a large baking dish (9x13 inches) with butter.

Prepare the Bread: In a large mixing bowl, combine the cubed bread, diced apples, dried cranberries, and nuts (if using). Toss them gently to mix.

Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt until completely combined.

Combine Mixtures: Pour the custard mixture over the bread and fruit mixture. Press down on the bread gently with a spatula to ensure all the bread cubes are soaked in the custard. Let it sit for 15-20 minutes, allowing the bread to absorb the liquid.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.

Bake: Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

Cool and Serve: Remove from the oven and let it cool for about 10-15 minutes before serving. Dust with powdered sugar if desired and serve warm with whipped cream or ice cream.

Enjoy: Relish the warm, comforting flavors of apple and cranberry in this delightful bread pudding!
