2 large apples (Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup brown sugar

1 tablespoon cornstarch

1 package (1 sheet) of refrigerated pie crusts (or homemade)

1 egg, beaten (for egg wash)

1 tablespoon granulated sugar (for sprinkling)

Optional: Caramel sauce for drizzling

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Apple Filling: In a medium bowl, combine the diced apples, lemon juice, ground cinnamon, nutmeg, brown sugar, and cornstarch. Stir until the apples are well-coated and let it sit for about 10 minutes to allow the flavors to meld.

      Roll Out the Pie Crust: On a lightly floured surface, roll out the refrigerated pie crust sheet to smooth it out. Using a round cutter or a bowl, cut out circles about 5 inches in diameter.

        Assemble the Snack Pockets: Place about 2 tablespoons of the apple mixture in the center of each dough circle. Carefully fold the dough over to create a half-moon shape, pressing the edges together to seal. Use a fork to crimp the edges for a decorative touch.

          Brush with Egg Wash: Place the filled snack pockets on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden-brown finish. Sprinkle the granulated sugar over each pocket for added sweetness.
