Apple Cinnamon Oatmeal Muffin Cups

1 ½ cups rolled oats

1 cup unsweetened applesauce

½ cup milk (dairy or non-dairy)

¼ cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

¼ teaspoon salt

1 large apple, peeled and diced (such as Granny Smith or Honeycrisp)

¼ cup raisins or walnuts (optional)

Cinnamon sugar for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with parchment paper or grease it lightly with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the rolled oats, applesauce, milk, honey (or maple syrup), egg, and vanilla extract. Stir until well blended.

      Incorporate Dry Ingredients: Sprinkle in the baking powder, baking soda, ground cinnamon, and salt. Mix until just combined.

        Add Apples: Gently fold in the diced apple and, if using, the raisins or walnuts. Ensure the fruit is evenly distributed throughout the batter.

          Fill Muffin Tins: Spoon the batter into the prepared muffin cups, filling each about three-quarters full. If desired, sprinkle a little cinnamon sugar on top for added sweetness and crunch.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

              Cool and Serve: Allow the muffin cups to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm, or store in an airtight container at room temperature.
