Ingredients
  

2 cups rolled oats

1 cup grated apples (about 2 medium apples, peeled and cored)

1/2 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/4 cup brown sugar

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chopped nuts (walnuts or pecans, optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Combine Dry Ingredients: In a large bowl, mix the rolled oats, brown sugar, cinnamon, baking soda, and salt until well combined.

      Prepare Wet Mix: In another bowl, combine the grated apples, almond butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and fully incorporated.

        Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir until everything is well combined. If you’re using nuts or dried fruits, fold them in at this point.

          Transfer to Pan: Spread the mixture evenly into the prepared baking pan. Press down firmly to create an even layer.

            Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.

              Cool and Slice: Remove from the oven and let it cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper and let them cool completely on a wire rack before slicing them into bars.

                Store: Once cooled, store the apple cinnamon oat bars in an airtight container at room temperature for up to a week or in the refrigerator for up to two weeks. They also freeze well for longer storage.
