Ingredients

6 slices of thick bread (challah or brioche works wonderfully)

2 large eggs

1/2 cup milk (whole or your choice of non-dairy)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon sugar (optional, adjust based on sweetness preference)

1 large apple (preferably Granny Smith or Honeycrisp), peeled and diced

2 tablespoons butter (for cooking)

Maple syrup (for serving)

Powdered sugar (for garnish, optional)

Instructions

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until fully combined and smooth.

Slice the Bread: Cut each slice of thick bread into 3 equal strips to form the French toast sticks.

Coat the Bread: Dip each bread strip into the egg mixture, allowing it to soak for a few seconds. Make sure all sides are well coated, but avoid soaking them too long to prevent them from becoming soggy.

Prepare the Apples: While the bread is soaking, heat a small skillet over medium heat and add diced apples. Cook for about 3-4 minutes until they start to soften, then add an extra sprinkle of cinnamon and a touch of sugar for sweetness. Cook for an additional minute, then remove from heat.

Cook the French Toast Sticks: In a large skillet, melt 1 tablespoon of butter over medium heat. Once melted and bubbling, place the soaked bread sticks in the skillet, ensuring they aren't overcrowded. Cook for 2-3 minutes on each side until golden brown and slightly crispy. Adjust the heat as necessary to avoid burning.

Repeat Cooking Process: Remove cooked sticks and place them on a paper towel-lined plate. Add the remaining butter to the skillet and repeat with the remaining bread sticks until all are cooked.

Serve: Arrange the French toast sticks on a serving platter and top with the cooked cinnamon apples. Dust lightly with powdered sugar if desired, and serve warm with a generous drizzle of maple syrup.
