Air Fryer Taco Mac and Cheese Balls

2 cups cooked macaroni pasta

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup taco seasoning (divided)

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1/2 cup diced bell pepper (any color)

1/4 cup green onions, chopped

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs, beaten

Olive oil spray or cooking spray

Optional: Fresh cilantro for garnish

Prepare the Filling: In a large mixing bowl, combine the cooked macaroni, cheddar cheese, mozzarella cheese, sour cream, 1/4 cup of the taco seasoning, black beans, corn, bell pepper, and green onions. Mix well until all ingredients are evenly combined.

    Shape the Balls: Using your hands, scoop approximately 2 tablespoons of the mixture and form it into a ball. Repeat this step until the entire mixture is used, placing the balls on a baking sheet lined with parchment paper.

      Prepare for Coating: Set up a breading station with two shallow bowls. In one bowl, place the breadcrumbs and in the second, add the beaten eggs along with the remaining 1/4 cup of taco seasoning. Dip each ball first into the egg mixture, allowing excess to drip off, then roll them in the breadcrumbs to coat evenly.

        Air Fry the Balls: Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with olive oil spray to prevent sticking. Place the breaded taco mac and cheese balls into the basket in a single layer, making sure they are not touching. Spray the tops lightly with olive oil for added crispiness.

          Cook: Air fry the balls for about 10 to 12 minutes, or until they are golden brown and crispy. You may need to cook them in batches depending on the size of your air fryer.

            Serve: Once cooked, let them cool for a minute, then transfer to a platter. Garnish with fresh cilantro if desired. Serve warm with your choice of dipping sauce, such as salsa or ranch.
