2 medium sweet potatoes (about 1 pound)

1 cup breadcrumbs (panko or regular)

½ cup grated Parmesan cheese (optional for extra flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

1 large egg

2 tablespoons olive oil (for coating)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Sweet Potatoes: Peel and chop the sweet potatoes into small chunks. Place them in a pot of boiling water and cook for about 10-15 minutes, or until tender. Drain and let cool slightly.

    Mash the Mixture: In a large bowl, combine the cooked sweet potatoes, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Use a fork or potato masher to create a smooth mixture.

      Shape the Nuggets: Start forming small nugget shapes (around 1-2 tablespoons each) from the sweet potato mixture. Place them on a parchment-lined baking sheet as you form them.

        Coat the Nuggets: In one shallow dish, add the breadcrumbs mixed with Parmesan cheese (if using). In another shallow dish, drizzle olive oil over the formed nuggets. Dip each nugget into the olive oil, ensuring it's coated lightly, then roll it in the breadcrumb mixture to coat well.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Cook in the Air Fryer: Place the nuggets in the air fryer basket in a single layer, making sure not to overcrowd them. Spray or brush a little olive oil on top for extra crispiness. Air fry for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.
