2 large boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon black pepper

1 teaspoon salt

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Prepare the Chicken: Begin by preheating your air fryer to 380°F (193°C). While it's heating, place the chicken breasts between two pieces of plastic wrap or parchment paper. Use a meat mallet to pound them to an even thickness (about ¾ inch thick) for even cooking.

    Make the Breading Mixture: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, black pepper, and salt. Mix well until all ingredients are fully integrated.

      Prepare the Wet Mixture: In another shallow bowl, whisk together the eggs and Dijon mustard until well combined. This will help the breading stick to the chicken.
