Air Fryer Eggplant Parmesan Rounds

1 medium eggplant, sliced into ¾-inch rounds

1 teaspoon salt (for sweating the eggplant)

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Italian seasoned)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 cups marinara sauce (for serving)

2 cups shredded mozzarella cheese

Cooking spray or olive oil for spraying

Prepare the Eggplant: In a colander, sprinkle the sliced eggplant with salt and let it sit for about 30 minutes. This will draw out excess moisture and bitterness. Rinse and pat dry with paper towels.

    Bread the Eggplant: Set up a breading station: In one bowl, place the flour. In a second bowl, place the beaten eggs. In a third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, and Italian seasoning.

      Coat the Eggplant Rounds: Dredge each eggplant slice first in the flour, shaking off any excess. Next, dip it in the beaten eggs, allowing any extra to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to adhere. Place the breaded rounds onto a plate.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air Fry the Eggplant: Lightly spray the air fryer basket with cooking spray, then carefully arrange the eggplant rounds in a single layer, making sure not to overcrowd them. (You may need to cook in batches.) Spray the tops of the eggplant rounds lightly with oil.

            Cook: Air fry the eggplant slices for 10 minutes, flipping them halfway through, until they are golden brown and crispy.

              Assemble the Eggplant Parmesan: Once they are cooked, take each round and layer them in a baking dish or an oven-safe skillet. Spoon a little marinara sauce over each round, then sprinkle with mozzarella cheese on top.

                Final Melt: Return the assembled rounds to the air fryer (or oven set to 375°F if you prefer). Cook for an additional 5 minutes, or until the cheese is melted and bubbly.

                  Serve: Remove from the air fryer and let them cool for a couple of minutes before serving. Drizzle with more marinara sauce and sprinkle with fresh basil or parsley if desired.
