Ingredients
  

1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs, beaten

1 cup unsweetened shredded coconut

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray (preferably coconut oil spray)

Optional: Sweet chili sauce for dipping

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. This will help them get crispy.

    Set Up Breading Station: In three shallow dishes, set up your dredging station.

      - In the first dish, add the flour, garlic powder, paprika, salt, and black pepper. Mix well.

        - In the second dish, add the beaten eggs.

          - In the third dish, combine the shredded coconut and panko breadcrumbs, mixing to combine.

            Coat the Shrimp:

              - Dredge each shrimp first in the flour mixture, ensuring it’s fully coated.

                - Next, dip it into the beaten eggs, letting any excess drip off.

                  - Finally, press the shrimp into the coconut-panko mixture, firmly coating it on all sides. Place the coated shrimp on a plate and repeat until all shrimp are coated.

                    Air Fry the Shrimp:

                      - Preheat your air fryer to 400°F (200°C).

                        - Spray the air fryer basket with cooking spray to prevent sticking.

                          - Arrange the shrimp in a single layer in the basket, making sure they aren’t overlapping; you may need to work in batches.

                            - Lightly spray the tops of the shrimp with cooking spray.

                              Cook: Air fry the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy. They should reach an internal temperature of 120°F (49°C).

                                Serve: Once cooked, remove the shrimp from the air fryer and serve immediately with sweet chili sauce for dipping, or your sauce of choice.
