14 oz (400g) firm tofu, drained and pressed

1 cup unsweetened shredded coconut

½ cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup all-purpose flour (or gluten-free flour)

1 teaspoon cornstarch

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon maple syrup (or agave syrup)

Cooking spray or a drizzle of olive oil

Instructions
 

Prepare the Tofu: Start by cutting the pressed tofu into bite-sized cubes or rectangles (approximately 1-inch pieces). Place them in a shallow bowl.

    Marinate the Tofu: In a small bowl, mix the soy sauce, maple syrup, and half of the garlic and onion powders. Pour this mixture over the tofu, gently tossing to coat. Let it marinate for at least 15 minutes, or up to 30 minutes for enhanced flavor.

      Prepare the Breading: In three separate shallow bowls, set up your breading station:

        - In the first bowl, add the all-purpose flour mixed with cornstarch.

          - In the second bowl, combine the remaining garlic powder, onion powder, smoked paprika, salt, and black pepper into the panko breadcrumbs.

            - In the third bowl, place the shredded coconut.

              Bread the Tofu: Take each marinated tofu piece and first dip it into the flour, shaking off the excess. Next, dip it in the panko mixture, ensuring it’s coated well. Finally, press it into the shredded coconut, making sure to coat it thoroughly. Place the coated tofu bites on a plate.

                Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                  Air Fry the Tofu Bites: Arrange the coconut tofu bites in a single layer in the air fryer basket, making sure they are not overcrowded. Lightly spray the bites with cooking spray or drizzle with a little olive oil for added crispiness.

                    Cook: Air fry the tofu bites for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.
