4 boneless, skinless chicken thighs

1 cup broccoli florets

1 cup bell peppers (mixed colors, sliced)

1 cup baby carrots

3 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels to remove excess moisture. This will help them get crispy in the air fryer. In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper. Add the chicken thighs to the bowl, coating them well in the marinade. Let them sit for at least 15 minutes to soak up the flavors.

    Prepare the Vegetables: While the chicken marinates, in a separate bowl, toss the broccoli, bell peppers, and baby carrots with a tablespoon of olive oil, salt, and pepper to taste. Make sure the vegetables are evenly coated.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes to ensure it’s at the right temperature when you add the food.

        Cook the Chicken: Place the marinated chicken thighs in the air fryer basket in a single layer. Cook at 375°F (190°C) for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and they are golden brown.

Cook at the same temperature for 8-10 minutes, shaking the basket halfway through, until the veggies are tender and slightly charred.
