1 medium head of cauliflower, cut into bite-sized florets

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour (or gluten-free flour)

1 cup breadcrumbs (panko for extra crunch)

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil or cooking spray

Optional: Fresh parsley for garnishing

Prepare the Cauliflower: Begin by washing the cauliflower and cutting it into bite-sized florets. Make sure they're roughly the same size for even cooking.

    Blanching (Optional): To soften the cauliflower a bit, you can blanch the florets in boiling salted water for 2-3 minutes. Drain and let cool, but this step is optional if you prefer a crunchier texture.

      Set Up Breading Station: In one bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second bowl, whisk together the egg. In a third bowl, place the breadcrumbs.

        Coat the Cauliflower: Dip each cauliflower floret first into the flour mixture, making sure to coat evenly. Then, dip into the egg mixture, allowing excess to drip off, and finally coat it in breadcrumbs. Press gently to ensure the breadcrumbs adhere well.

          Add Cheese: Once all florets are coated, sprinkle the shredded cheddar cheese onto the cauliflower nuggets, pressing them in lightly so they attach.
