Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crunch)

1/2 cup buffalo sauce (plus extra for tossing)

2 tbsp unsalted butter, melted

Fresh parsley, chopped (for garnish)

Celery sticks and blue cheese dressing (for serving)

Instructions
 

Prepare Chicken:

    - In a medium bowl, mix the flour, garlic powder, paprika, salt, and black pepper. Set aside.

      - In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

        Coat Chicken:

          - Dredge each piece of chicken first in the flour mixture, shaking off the excess.

            - Dip in the beaten eggs, allowing any excess to drip off.

              - Then, coat the chicken in breadcrumbs, pressing lightly to ensure they adhere well.

                Preheat Air Fryer:

                  - Preheat your air fryer to 380°F (190°C) for about 5 minutes.

                    Air Fry Chicken:

                      - Lightly spray the air fryer basket with cooking spray.

                        - Place the coated chicken bites in a single layer in the basket (you may need to do this in batches, depending on the size of your air fryer).

                          - Spray the top of the chicken bites lightly with cooking spray to help them crisp up.

                            - Cook for 10-12 minutes, shaking the basket halfway through, until golden brown and cooked through (internal temperature should reach 165°F/74°C).

                              Toss in Buffalo Sauce:

                                - In a large bowl, combine the buffalo sauce and melted butter.

                                  - Once the chicken bites are done, transfer them to the bowl and toss gently until they are coated in the buffalo sauce.

                                    Serve:

                                      - Garnish the buffalo chicken bites with chopped fresh parsley.

                                        - Serve immediately with celery sticks and blue cheese dressing on the side for dipping.
