1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tablespoon lemon zest (about 1 lemon)

1 teaspoon vanilla extract

½ cup sour cream

½ cup fresh lemon juice (about 3 lemons)

Powdered sugar, for dusting (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

    Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream butter and sugar: In a large mixing bowl, use an electric mixer on medium speed to cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add eggs and flavor: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the lemon zest and vanilla extract until combined.

          Combine wet and dry ingredients: Gradually add the flour mixture to the butter mixture alternately with the sour cream and fresh lemon juice, starting and ending with the flour mixture. Mix just until combined; be careful not to overmix.

            Pour batter into the pan: Pour the batter into the prepared cake pan and smooth the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

              Bake the cake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
