Achieving uniformity in size is crucial for the perfect Sweet Potato Crunch Bites. When preparing these delightful snacks, aim for pieces that are roughly the same size—about one inch in diameter. This consistency ensures even cooking, allowing each bite to be perfectly crispy on the outside while remaining tender on the inside. To achieve this, consider using a small ice cream scoop or a tablespoon to portion out the mixture. Forming the bites with your hands can also work, but measuring can help maintain that uniformity.

Ingredients

2 medium sweet potatoes

1 cup granola (preferably nut-based)

1/4 cup almond butter

2 tablespoons honey or maple syrup

1/4 teaspoon cinnamon

Instructions

Prep the Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes under cold water and pierce them a few times with a fork. Place them on a baking sheet lined with parchment paper and roast for about 45-50 minutes, or until they are fork-tender. Remove from the oven and let cool slightly.

Prepare the Filling: Once the sweet potatoes are cool enough to handle, scoop out the flesh into a mixing bowl. Discard the skins. Add almond butter, honey or maple syrup, and cinnamon to the sweet potato flesh. Use a fork or a potato masher to mix until smooth.

Form the Bites: Once the mixture is well combined, form small bite-sized balls (about 1 inch in diameter) using your hands.

Coat with Granola: Place the granola into a shallow dish. Roll each sweet potato ball in the granola until fully coated. This will provide a delightful crunch to each bite!

Chill and Serve: Place the coated bites in the refrigerator for at least 30 minutes to firm up. Serve chilled or at room temperature as a delicious snack or appetizer.
