30-Minute Shrimp and Broccoli Pasta

8 oz spaghetti or your favorite pasta

1 lb large shrimp, peeled and deveined

2 cups broccoli florets

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup olive oil

1/2 cup chicken or vegetable broth

1 lemon (zested and juiced)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling pasta water. Blanch for 2-3 minutes until bright green and tender-crisp. Remove with a slotted spoon and place in an ice bath to stop cooking. Drain and set aside.

      Sauté Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

        Cook the Shrimp: Add the shrimp to the skillet and season with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set them aside.

          Combine Ingredients: In the same skillet, add the chicken or vegetable broth and lemon juice. Bring to a light simmer, scraping any bits off the bottom of the pan. Return the cooked pasta and broccoli to the skillet, tossing to combine.

            Finish the Dish: Add the shrimp back to the skillet, along with lemon zest, and toss everything gently. If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.

              Serve: Plate the pasta and garnish with fresh parsley and grated Parmesan cheese if desired. Enjoy your delicious shrimp and broccoli pasta!
