8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup extra virgin olive oil

Juice and zest of 1 lemon

1/4 cup white wine (or low-sodium chicken broth)

1/2 tsp red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

Salt and black pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet, seasoning lightly with salt and pepper. Cook for 2-3 minutes until the shrimp turn pink and are just cooked through, flipping halfway.

        Make the Sauce: Pour in the white wine (or chicken broth), lemon juice, and lemon zest. Stir well to combine and let simmer for about 2 minutes to reduce slightly.

          Combine with Pasta: Add the drained pasta to the skillet, tossing it with the shrimp and sauce. If it seems dry, gradually stir in some reserved pasta water until you reach your desired consistency.

            Finish and Serve: Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary. Serve immediately, garnished with additional parsley and grated Parmesan cheese, if desired.
