Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 bell pepper (any color), sliced

1 cup snap peas, trimmed

1 cup broccoli florets

¼ cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prep the Ingredients: Gather all your ingredients and cut the bell pepper, snap peas, and broccoli.

Make the Honey Garlic Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, and cornstarch (if using). Set aside.

Sauté the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.

Stir-Fry the Vegetables: In the same skillet, add remaining oil. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Then add the bell pepper, snap peas, and broccoli. Cook for about 4-5 minutes until vegetables are tender-crisp.

Combine Everything: Return the cooked shrimp to the skillet. Pour the honey garlic sauce over the shrimp and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce starts to thicken slightly.

Serve: Remove from heat. Serve the honey garlic shrimp stir-fry over cooked rice or quinoa. Garnish with chopped green onions and sesame seeds.
