1 lb (450g) large shrimp, peeled and deveined

3 tablespoons honey

2 tablespoons soy sauce

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1 cup cooked brown rice or quinoa

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions
 

Prepare the Shrimp Marinade: In a medium bowl, mix honey, soy sauce, rice vinegar, minced garlic, and grated ginger. Set aside 2 tablespoons of the sauce for later use.

    Marinate the Shrimp: Add the shrimp to the remaining marinade in the bowl. Toss well to coat and let it marinate for about 10 minutes while you prepare the rest of the ingredients.

      Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook them for 2-3 minutes on one side until they turn pink and slightly charred, then flip and cook for another 1-2 minutes on the other side. Be careful not to overcook. Remove the shrimp from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the sliced red bell pepper and snap peas. Sauté for about 3-4 minutes until they are tender but still crisp. Season with salt and pepper to taste.

          Combine Everything: Return the cooked shrimp to the skillet with the vegetables. Add the reserved marinade and toss everything together for about 1 minute, allowing the sauce to coat all the ingredients.

            Assemble the Bowls: Divide the cooked brown rice or quinoa among bowls, then top with the honey garlic shrimp and vegetables.
