When it comes to selecting fresh asparagus, there are a few key characteristics to look for to ensure you’re getting the best quality. Fresh asparagus should have a vibrant green color, with firm and straight stalks. Avoid any that are limp or have dark spots, as these can indicate age or spoilage. Additionally, the tips of the asparagus should be tightly closed and firm, signaling freshness. If you can find it, look for thinner stalks, which are generally more tender and flavorful.

Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus (trimmed)

1/4 cup honey

4 cloves garlic (minced)

3 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon fresh ginger (grated)

1 tablespoon rice vinegar

Salt and pepper (to taste)

1 teaspoon sesame seeds (for garnish)

2 green onions (sliced, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together honey, minced garlic, soy sauce, grated ginger, rice vinegar, and a pinch of salt and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a dish and pour half of the marinade over them, making sure they are well coated. Let them marinate for about 10 minutes while preparing the asparagus.

Prep the Asparagus: On a large baking sheet, place the trimmed asparagus. Drizzle with olive oil, salt, and pepper, tossing to coat evenly.

Add Salmon to the Sheet: Move the asparagus to one side of the baking sheet and arrange the marinated salmon fillets on the other side.

Bake: Pour the remaining marinade over the salmon and asparagus. Bake in the preheated oven for about 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender but still vibrant green.

Garnish and Serve: Once cooked, remove from the oven and let sit for a couple of minutes. Sprinkle with sesame seeds and sliced green onions before serving.

Enjoy: Plate the salmon and asparagus, drizzle with any remaining pan juices, and savor your quick and delightful meal!
