2 tbsp olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1/2 cup heavy cream (or coconut cream for a dairy-free version)

1 tsp sugar (to balance acidity)

Salt and pepper to taste

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

1 tsp dried oregano

Optional: Freshly grated Parmesan cheese, for serving

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Add in the minced garlic and sauté for another 1-2 minutes until fragrant.

    Add Tomatoes & Broth: Stir in the crushed tomatoes, vegetable broth, and sugar. Season with salt, pepper, and dried oregano. Bring the mixture to a gentle simmer.

      Simmer the Soup: Allow the soup to simmer for about 10 minutes, stirring occasionally, until the flavors meld together nicely.

        Blend for Creaminess: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can work in batches and blend it in a countertop blender.

          Stir in Cream & Basil: Return the blended soup to low heat. Stir in the heavy cream and chopped basil. Let it heat through for an additional 3-4 minutes. Taste and adjust seasoning if necessary.
