1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

2 cups beef or vegetable broth

1 cup elbow macaroni

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup shredded cheddar cheese

1/4 cup fresh cilantro or green onions, for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes. Stir in the minced garlic and sauté for an additional 30 seconds until fragrant.

    Brown Meat: Add the ground beef or turkey to the pot, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Add Beans and Tomatoes: Stir in the kidney beans, diced tomatoes (with their juices), beef or vegetable broth, elbow macaroni, chili powder, cumin, smoked paprika, and season with salt and black pepper. Bring the mixture to a simmer.

        Cook Macaroni: Lower the heat to medium-low and cover the pot. Allow the mixture to simmer for about 10-12 minutes, or until the macaroni is tender and the chili has thickened slightly. Stir occasionally to prevent sticking.
