2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

1 cup shredded mozzarella cheese

½ cup crumbled feta cheese

½ cup onion, finely chopped

2 cloves garlic, minced

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste

Salsa or sour cream for serving

Instructions
 

Prep the Ingredients: Clean and slice the mushrooms, chop the spinach, and finely chop the onion and garlic. Set everything aside.

    Sauté the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté for about 2 minutes until the onion becomes translucent.

      Add the Mushrooms: Increase the heat slightly and add the sliced mushrooms to the skillet. Cook for about 4-5 minutes, stirring occasionally, until they are browned and tender. Season with paprika, salt, and pepper to taste.

        Incorporate Spinach: Add the chopped spinach to the skillet and cook for an additional 2 minutes until wilted. Remove the skillet from heat and set aside.

          Assemble the Quesadillas: Sprinkle half of the mozzarella cheese on one half of each tortilla. Top with the sautéed spinach and mushroom mixture, followed by the crumbled feta cheese. Finish with the remaining mozzarella cheese.

            Cook the Quesadillas: Fold the tortillas in half to enclose the filling. In a clean skillet, heat the remaining tablespoon of olive oil over medium heat. Place the folded quesadillas in the skillet (you may need to do this in batches) and cook for about 3-4 minutes on each side or until golden brown and crispy.

              Serve: Remove the quesadillas from the skillet, let them rest for a minute, then slice into wedges. Serve hot with salsa or sour cream for dipping.
