1 lb ground beef (80/20 for optimal flavor)

1 cup long-grain white rice, rinsed

2 cups beef broth (or water)

1 cup diced tomatoes (canned, with juices)

1 cup shredded cheddar cheese (plus extra for topping)

1 medium onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp paprika

½ tsp cumin

Salt and pepper, to taste

1 tbsp olive oil

¼ cup chopped fresh cilantro (optional, for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for about 3-4 minutes until soft.

    Brown the Beef: Add the ground beef to the skillet. Break it up with a spatula and cook until browned, about 5-6 minutes. Drain excess fat if necessary.

      Add Garlic and Spices: Stir in the minced garlic, chili powder, paprika, cumin, salt, and pepper. Cook for another minute until fragrant.
