30-Minute Beef and Veggie Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

1 cup broccoli florets

1 red bell pepper, sliced into thin strips

1 cup snap peas, trimmed

1 medium carrot, julienned

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium if preferred)

2 tbsp oyster sauce (optional, for extra flavor)

1 tbsp cornstarch

2 tbsp vegetable oil (divided)

Salt and pepper, to taste

Cooked rice or noodles, for serving

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, and a sprinkle of pepper. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Prep the Veggies: Wash and cut the broccoli, bell pepper, snap peas, and carrot. Set aside in a bowl. Keep the green and white parts of the green onions separate.

      Heat the Pan: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer and sear for 2-3 minutes without stirring for good browning.

        Stir-Fry the Beef: Stir the beef around for an additional minute or until just cooked through. Remove from the pan and set aside.

          Cook the Veggies: In the same pan, add the remaining 1 tablespoon of oil. First, add the garlic and ginger, stirring quickly for 30 seconds until fragrant. Then add the broccoli, bell pepper, snap peas, and carrot. Stir-fry for about 3-4 minutes until the veggies are tender yet crisp.

            Combine: Return the cooked beef to the skillet and toss everything together. Add the white parts of the green onions and a splash more soy sauce if desired. Cook for another 1-2 minutes until heated through.

              Serve: Spoon the beef and veggie stir-fry over a bed of cooked rice or noodles. Garnish with the green parts of the green onions and enjoy!
