2 ripe bananas

1 cup rolled oats

1/2 cup chocolate chips (or your choice of mix-ins like nuts or dried fruits)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, mash the ripe bananas using a fork until smooth and creamy.

      Add the rolled oats to the mashed bananas, and stir until well combined.

        Gently fold in the chocolate chips (or preferred mix-ins) until evenly distributed throughout the mixture.

          Using a tablespoon, drop spoonfuls of the cookie mixture onto the prepared baking sheet, spacing them about 2 inches apart.

            Flatten each cookie slightly with the back of the spoon, as they won’t spread much while baking.

              Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.

                Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
