25-Minute Creamy Tomato Tortellini

Ingredients
  

1 package (9 oz) cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 cup heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

1 cup fresh spinach

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, add the cheese tortellini. Cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Add Tomatoes: Pour in the diced tomatoes with their juices, and stir in the Italian seasoning and red pepper flakes (if using). Cook for about 3-4 minutes, allowing the mixture to simmer and thicken slightly.

        Make it Creamy: Reduce heat to low, and stir in the heavy cream. Allow the mixture to simmer for another 2-3 minutes, stirring occasionally, until well combined and heated through.

          Combine Ingredients: Add the cooked tortellini to the creamy tomato sauce, and gently fold in the fresh spinach until wilted. Season with salt and pepper to taste.

            Finish with Cheese: Stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little pasta water to adjust the consistency.

              Serve: Divide the creamy tortellini among plates or bowls. Garnish with fresh basil leaves and an extra sprinkle of Parmesan, if desired.
