200g dried noodles (your choice: spaghetti, ramen, or rice noodles)

4 tablespoons garlic chili oil

3 garlic cloves, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar

1/4 teaspoon red pepper flakes (optional)

2 green onions, finely sliced

Fresh cilantro, for garnish

Toasted sesame seeds, for garnish

Instructions
 

Cook the noodles: Bring a pot of water to a boil and cook the dried noodles according to package instructions until al dente. Reserve 1/2 cup of the cooking water before draining the noodles.

    Prepare the sauce: While the noodles are cooking, heat the garlic chili oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.

      Mix the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes (if using). Pour this mixture into the skillet with the garlic and oil, stirring to combine.

        Combine noodles and sauce: Add the drained noodles to the skillet. Toss to coat the noodles in the chili oil sauce, adding reserved pasta water a little at a time until the desired consistency is reached.

          Garnish and serve: Once combined, remove from heat and toss in the sliced green onions. Serve immediately, garnished with fresh cilantro and toasted sesame seeds.
