2 large eggs

1/4 cup extra virgin olive oil, plus more for cooking

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup finely chopped green onions

1/4 cup grated Parmesan cheese (or feta for a stronger flavor)

1/2 tsp black pepper (or to taste)

Optional: chopped fresh herbs (such as basil or parsley) for added flavor

Instructions
 

Prepare the Batter: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. In a separate bowl, whisk the buttermilk, eggs, and 1/4 cup of olive oil until well combined.

    Combine Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay. Fold in the chopped green onions, grated Parmesan cheese, black pepper, and any optional herbs you wish to add.

      Heat the Pan: Heat a non-stick skillet or griddle over medium heat and add a little olive oil, ensuring the surface is well coated.

        Cook the Pancakes: Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges appear set.
