1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season lightly with salt, pepper, and paprika.

    Cook the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender-crisp. Remove the asparagus from the skillet and set aside.

      Sauté the Shrimp: In the same skillet, add 2 tablespoons of unsalted butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Add the seasoned shrimp and cook for 2-3 minutes until they turn pink and opaque. Make sure not to overcrowd the pan to ensure even cooking.

        Combine and Flavor: Once the shrimp are cooked, return the asparagus to the skillet. Add the lemon zest and lemon juice, and toss everything together gently. Cook for an additional 1-2 minutes, allowing the flavors to meld together.

          Finish & Serve: Remove from the heat, and garnish with freshly chopped parsley. Serve immediately with lemon wedges on the side for an extra citrusy kick.
