Easy & Creamy Pumpkin Gnocchi

2 cups pumpkin puree (canned or homemade)

1 large egg

1 ½ to 2 cups all-purpose flour (plus extra for dusting)

½ teaspoon nutmeg

½ teaspoon cinnamon

Salt, to taste

¼ cup grated Parmesan cheese (plus more for serving)

¼ cup heavy cream

2 tablespoons unsalted butter

Fresh sage leaves, for garnish

Cracked black pepper, for serving

Instructions
 

Prepare the Dough: In a large mixing bowl, combine the pumpkin puree, egg, nutmeg, cinnamon, and a pinch of salt. Mix well. Gradually add 1 ½ cups of flour to the mixture, stirring with a fork or your hands until it comes together into a soft dough. If the dough is too sticky, add more flour a little at a time until it's manageable.

    Shape the Gnocchi: Dust a clean surface with flour. Divide the dough into four sections. Roll each section into a long rope about ½ inch thick. Cut the rope into 1-inch pieces. To create the classic gnocchi shape, roll each piece along the tines of a fork or a gnocchi board.

      Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking them until they float to the surface (about 2–3 minutes). Use a slotted spoon to remove them and transfer to a plate.

        Make the Cream Sauce: In a large skillet over medium heat, melt the butter. Add the heavy cream and stir to combine. Allow to simmer gently for 2–3 minutes until slightly thickened. Stir in the Parmesan cheese until melted and smooth.

          Combine Gnocchi and Sauce: Gently add the cooked gnocchi to the skillet with the cream sauce. Toss to coat evenly and warm through for another minute.

            Serve: Plate the creamy pumpkin gnocchi and garnish with fresh sage leaves, an extra sprinkle of Parmesan, and cracked black pepper to taste.
