4 large bell peppers (any color)

2 cups cooked stuffing mix (store-bought or homemade)

1 cup cooked chicken or turkey, shredded (optional)

1 cup diced tomatoes (canned or fresh)

1/2 cup chopped onions

1/2 cup corn (canned or frozen)

1/2 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheese (cheddar, mozzarella, or your choice)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush them with olive oil and place them upright in a baking dish.

      Make the Filling: In a large bowl, combine the cooked stuffing mix, shredded chicken or turkey (if using), diced tomatoes, chopped onions, corn, garlic powder, Italian seasoning, salt, and black pepper. Mix well until everything is evenly incorporated.

        Stuff the Peppers: Carefully spoon the stuffing mixture into each prepared bell pepper, packing it down gently to ensure they are filled generously.

          Add the Cheese: Sprinkle the shredded cheese evenly over the tops of the stuffed peppers.

            Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the peppers are tender and the cheese is bubbly and golden.

              Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley if desired, then serve warm.
