Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, cheddar cheese, salsa, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Mix everything together until well combined.
Assemble the Taquitos: Warm the flour tortillas in the microwave for about 20-30 seconds to make them pliable. Take one tortilla and add about 2-3 tablespoons of the filling to the lower half. Roll it tightly, then place it seam-side down on a plate. Repeat with the remaining tortillas and filling.
Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Cook the Taquitos: Lightly spray the taquitos with cooking spray to help them crisp up. Place them in the air fryer basket in a single layer, leaving space between each taquito for air circulation. You may need to do this in batches.
Air Fry: Cook for 8-10 minutes, flipping them halfway through, until they are golden brown and crispy.
Serve: Once cooked, remove the taquitos from the air fryer and let them cool for a couple of minutes. Serve with extra salsa on the side for dipping, along with guacamole or sour cream if desired.
